Appartiene alla famiglia dei formaggi a erborinazione naturale. E' nella seconda fase di stagionatura che, affiancando alle forme dei pani di segale in seguito alla foratura, le spore attirate naturalmente dall'asciugatura della pasta permettono la formazione delle caratteristiche striature bluastre. La pasta è compatta e cremificando in alcuni punti, crea un gusto inconfondibile.
